Orange horny bug

Papilio polyxenes, eastern black swallowtail caterpillar, found in the herbs, four of which are decimating the parsley. No worries, there’s enough parsley to share. And since they are freeloading parsley eaters, taking a short film where they get poked is not unwarranted. That orange thingy is called an osmeterium.
